WHere is an easy interpretation of a drink found on a new menu. It's a batch prepared mix that is loaded with tastes associated with festive period, rendering it ideal for a holiday party. Reserve the remaining cordial to use in brunch beverages, sweets, or to make additional servings of bikinis.
Bikini Recipe
Yields 10 guests
Ingredients for the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Premix (makes 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Citrus Syrup: Combine every ingredients into a pan, heat until it reaches a light boil, stirring so the sugar melts. Then, remove from the stove allowing it to reach room temperature fully. Decant to a sterilised bottle, close it keeping it in the refrigerator, it will last for around a month.
Preparing the Premix: Combine the specified spirits and syrup into a sizeable container, let it rest for 60 minutes, then filter it preferably using muslin, making it fully clarified.
For serving: Pour 85ml from the premix to a cocktail shaker filled with ice, gently stirring gently for one minute to cool it down. Pour into an chilled martini glass or equivalent, top with a few cranberries and finish using a light spray of mandarin oil over the drink.
